I admit it, I tend towards the extreme when I really like something. Such is the case with stroopwafels. I gotta have the stroopwafels.

A few weeks ago Sarah returned from a business trip to Holland with boxes of stroopwafels as gifts. She had also brought them back after her previous trip in 2004, but somehow the taste of those stroopwafels was not enough to get me hooked as I am now. Now that the box of Gilda Gouda Stroopwafels are gone, I’ve been desperately searching for the best replacement I can find. I’ll report back on my findings.

So just what are these cookies of the gods? They are two layers of soft buttery chewy waffle goodness filled with a caramel syrup. They taste great out of the box but are made to sit on the lip of a cup of coffee or tea so that the heat of the beverage causes the cookies to melt ever so slightly.

I need more stroopwafels. I gotta have the stroopwafels…
